Why vacuum storage beats an airtight lid

An airtight container stops new air getting in. It does nothing about the air already trapped alongside your beans — and that trapped oxygen keeps reacting with the coffee oils long after the bag is closed. Staling is driven by oxygen exposure, so the practical goal of coffee storage is to reduce how much oxygen sits in contact with the beans, not simply to keep the lid shut.

The V7 evacuates that air. Press the function button and the pump draws the headspace down until the target pressure is reached, at which point it shuts off automatically. From then on the canister is not just closed — it is actively held in a low-oxygen state.

It re-seals itself. You don't have to remember.

Every seal loses a little pressure over time, and every time you open the lid to scoop out a dose, the vacuum is gone. Most vacuum canisters put that job back on you. Glass where it matters

The body is high-borosilicate glass — chemically inert, so it will not absorb the aroma of a fruity natural and pass it on to the next washed lot, and it will not carry the plastic note that cheaper storage jars develop over time. It is also transparent, which sounds trivial until you have opened three opaque canisters looking for the one that still has beans in it. The lid houses the pump, battery and display; the sealing ring is silicone; the lid shell is ABS.

How to use it

1. Power on. Press and hold the function button for 2 seconds. The display lights up and the day counter starts automatically.
2. Wake the screen. A single click of the function button lights the display.
3. Vacuum. Click the function button to start or stop the pump. It stops on its own once the set pressure is reached.
4. Open. Press the air pressure release button to equalise the canister, then lift the lid.

Before you use it

• Do not store liquids or fine powders. Powder and liquid can work into the seal gaps and the charging port. The V7 is designed for whole beans and other coarse, dry goods.

Frequently asked questions

How does a vacuum canister keep coffee beans fresh?

Roasted coffee stales mainly through contact with oxygen, which reacts with the aromatic oils and flattens the cup. A vacuum canister removes most of the air surrounding the beans, so there is far less oxygen available to react with them. The Matrix V7 does this automatically and then re-vacuums whenever its pressure sensor detects the seal weakening.

Do I have to press the button every time to re-vacuum it?

No. The V7 has a pressure detection function that automatically runs the pump when the internal pressure gets too low. You only need to press the button when you want to vacuum immediately after refilling or opening the canister.

Can I store ground coffee in it?
